I’m committed to sharing the importance of wellness benefits from great-tasting, good-for-you food. Recently, I came across this great article on WhatCom Farm Friends about an innovative and entertaining way for all LYFERS (both kids and adults) to remember how the following fruits and veggies can benefit your wellbeing. I’ve picked my favorites, along with highlighting the delicious LYFE dishes where you can find these ingredients.
WALNUTS
A walnut looks like a little brain, a left and right hemisphere, upper LOBES and lower LOBES. Even the deep lines on the nut are just like the neo-cortex. We now know walnuts help develop more than three dozen neuron-transmitters for brain function. LYFE Kitchen offers a great Beets and Farro Salad with walnuts – a perfect way to incorporate this brain food!
CELERY, BOK CHOY, RHUBARB
Celery, Bok Choy, Rhubarb and many more look just like bones. These foods specifically target bone strength and are packed with folic acid, beta-carotene and potassium. Research suggests that potassium keeps your muscles and nerves healthy while lowering your blood pressure and beta-carotene can reduce the risk of both lung and bladder cancers. These foods help replenish the skeletal needs of the body. On LYFE Kitchen’s Fall Menu, they are introducing a new salmon with baby bok choy, shitake, jalapenos, scallions and ginger miso. This will be their first dish with baby bok choy, which is replacing the zucchini from the Spring/Summer Menu.
SWEET POTATOES
Sweet Potatoes look similar to your pancreas, a gland organ in your digestive system, and actually balance the glycemic index of diabetics. They are packed with fiber and their soluble fibers can help lower blood sugar and cholesterol levels. Try LYFE Kitchen’s delicious Sweet Potato Fries served with agave ketchup.
