LYFE Kitchen Debuts Delicious Ravioli Dish
Consulting Vegan Chef Tal Ronnen shares how he developed the appetizing Sweet Corn Ravioli dish for LYFE Kitchen.

chen’s mission has always been to create great-tasting, good-for-you food options that inspire our guests to live a happy and healthy lifestyle. As the consulting vegan chef for LYFE, part of my job is to create dishes that will help others realize that a plant-based diet does not mean sacrificing taste.
Several factors motivate people every day to adapt a plant-based diet, but you don’t have to be a vegetarian or vegan to appreciate the recipes that so many of us love. Seeking to create a seasonal dish that would appeal to both those with dietary preferences and those without, I carefully considered some of the season’s best vegetables and pairings. This resulted in the savory Sweet Corn Vegan Ravioli with tomatoes, peas, garlic and basil.
I’m extremely proud of this dish and believe it appeals to everyone who relishes a beautiful, filling and great-tasting pasta. What’s really special about this new dish is that by adding ravioli to the menu, we’re able to offer a seasonal pasta dish year round simply by re-imagining the filling to highlight a vegetable from each season.
I’m excited to explore taste combinations and flavors for the fall with this dish and hope that our LYFERS will try this vegan menu item that I feel will appeal to all palates.
The ravioli dish is in addition to the new Quinoa Crunch Wrap with whole wheat tortilla, fresh veggies, avocado, edamame hummus, forbidden rice and adzuki beans with hot sauce on the side.
Here are my top three transformational tips that will help you start to adopt a higher plant-based diet:
- Meatless Mondays: Try eating all of your meals without any meat every Monday of the week.
- Try Ethnic Restaurants & Recipes: Try eating at an ethnic restaurant once a week. So many ethnic cultures inherently have plant-based and vegan meals. For example, Chinese food, Mexican food, Indiana Food, etc. It’s really easy to try vegan items from these menus and a perfect solution for individuals that travel a lot!
- Adapt Your Favorite Recipes: Start replacing or adapting your favorite recipes by leaving out meat and dairy products. Favorite recipes include cheese? Try it without the cheese. Does your family love spaghetti and meatballs, try spaghetti and veggie meatballs instead. These are easy switches to make and familiar for you and your family.
- Dairy Switch: Instead of regular diary milk with your breakfast cereal, try almond, hemp, soy or rice milk for a quick switch.
